707 Chardonnay is a honeyed, golden-yellow color.

The aromas are reminiscent of green apples, vanilla bean, and apricots. The layered flavors are smooth and silky, with intricate textures to include tropical fruits and a large dash of citrus freshness.

The wine has a sparkling acidity that makes the flavors light and lively, yet also rich with vanilla-laced oak tones with a hint of caramel. The finish is bright, delectable, and decidedly food friendly.

Food pairings: our food pairing suggestions would include lobster risotto, watercress and crab salad, broccoli chicken fettucini or a pumpkin ravioli bisque.

Sensory profile: brilliant pale straw color. Bouquet of ripe flowers, lemon, tropical fruit. Tastes of white pulp fruit, and wonderful minerality accompanied by a crispy acidity that lingers on the palate.

Vinification:
Following a selective hand harvest in late August, the grape stalks are removed, and the subsequent crushed grapes undergo a cold maceration in stainless steel. A soft pressing follows. The clarified must is subsequently fermented with selected yeast in temperature controlled stainless steel vats for 12 days at 60.8°F to preserve the natural
100% Chardonnay fruit and inimitable freshness of the wine.
Recommended pairings:
Superb with seafood platters or simply as a great aperitif wine to sip on a warm summer’s night.

TASTING RESULTS: Aromas of candied apple, butterscotch, and toasted almond. The palate sees hints of sage and dried herbs with lemon meringue pie and honeydew melon with a sensuous finish. 14.1%ABV
THE VINEYARD Sourced from the award-winning Tudor Hills Vineyard farmed by the Tudor family in Washington state’s Columbia Valley AVA.

VARIETAL COMPOSITION: Sourced 100% Chardonnay.
PRODUCTION & AGING: Barrel aged 10 months in 40% new French Oak Sur lie.
THE WINEMAKING Throughout harvest, Winemaker Richard Batchelor worked closely with local growers and visited each vineyard to taste for maturity and ripeness to determine the precise moment to pick the fruit. Grapes were hand-harvested during the cool hours of the morning to preserve bright fruit notes and destemmed into the press, where each lot was processed on a champagne cycle. This is a slower press cycle that is extremely gentle on the fruit ensuring optimum fruit character is preserved. The wine was then barrel aged for 10 months in new French Oak. The wine was stirred in barrel on its lees and racked when necessary to soften the tannins. Before blending and bottling, the wine was racked off the lees for clarity.

TASTING RESULTS: Aromas of honeydew melon, peach and caramel paired with a creamy palate with hints of honey and fig with a lingering butterscotch finish. ABV 13.5%.

THE VINTAGE The 2022 growing season in Washington was notable for a cool, wet spring, a hot, but brief, summer, and nearly unprecedented warm finishing weather in late September and almost all of October. It is expected to be a top-quality vintage, despite overall higher tonnages due to increased berry and cluster size.

San Felipe Roble Chardonnay grapes are harvested at optimum maturity and protected against oxidation.
It is a light-yellow color with intense green tones.
The very fruity aromas of apple and banana can be appreciated on the nose. Fresh and clean, with a touch of vanilla from the oak, and a persistent finish.

Chef Jamie McFadden and winemaker Norm Saley have once again co-created an exceptional food pairing wine that showcases fine acidity and minerality while counteracting a degree of sweetness. Albariño (or Alvarinho) is a thick-skinned green grape varietal originating from the old world. The variety shows high acidity and a fine texture of citrus, stone fruit, and mineral elements that pair phenomenally with Spanish and Mediterranean seafood and vegetarian dishes. On top of that, Albariño can mature in oak or on lees for a luscious style and a creamy taste.
Expect from this vintage a bouquet of grapefruit, orange, white flowers, and citrus blossom. This wine pairs beautifully with Chef Jamie’s Zucchini Baba Ganoush and his interpretation of Muhamarra.. which combines roasted walnuts, and sweet peppers.

Crafted from new world grapes in a classic old-world style... indigenous to this excellent food pairing wine. Expect from our 2022 vintage aromas of citrus, Asian pear, and white peach. The palate begins with hints of honeysuckle followed by notes of lemon curd, star jasmine, and apricot. The natural spice flavors of Grenache Blanc work well with richer white meats and enable it to be paired with generously flavored recipes.
The wine has a moderate amount of acidity, making it an ideal pairing with risotto, while also being light enough to balance out fresh garden salads and grilled vegetables.

VINTAGE NOTES: Crisp with Citrus notes.

TASTING RESULTS: Lively, aromatic and fruity, this wine is dominated by a characteristic Sauvignon Blanc citrus aroma.

The St. Christopher Zeller Schwarze Katz is produced in the village of Zell along Germany's Mosel River. The legend is, there was a black cat in one of the most popular cellars along the Mosel, that would each vintage aggressively guard a barrel of Zeller wine that was cellared alongside many other wine barrels. The locals and wine merchants presumed that the wine in that barrel the cat so heavily guarded was the best and most special of the vintage. The wine is a Riesling blend that is very approachable with a delightful fruitiness which is slightly sweet, a perfect pairing wine for Asian Cuisines.
